Ingredients
  • 1/2 bunch garlic scapes
  • 1 tsp soy sauce
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 tsp gochugaru (Korean chili flakes)
  • 1 tsp oligosaccharide
  • A pinch of sesame seeds

Cooking Instructions

Step 1

Hello everyone! Today, we’re going to make a spicy and sweet garlic scape salad seasoned with gochujang, known as a ‘rice thief’ because it makes you eat so much rice. It’s the perfect side dish to stimulate your appetite!

Step 2

First, thoroughly wash the fresh garlic scapes under running water. Trim them into bite-sized pieces, about 4-5 cm long. Bring a pot of water to a rolling boil, adding a little salt. Once the water is boiling vigorously, add the prepared garlic scapes and blanch them very briefly, for **30 seconds to a maximum of 1 minute**. It’s crucial not to overcook them, as this will lose their crispiness!

Step 3

Immediately after blanching, rinse the garlic scapes under cold water to quickly cool them down. Then, drain them thoroughly in a colander. Any remaining water could dilute the seasoning.

Step 4

Place the drained garlic scapes into a clean bowl. It’s time to add the seasoning. First, add 1 tablespoon of gochujang generously over the garlic scapes.

Step 5

Next, add the remaining seasoning ingredients: 1 teaspoon of soy sauce, 1 teaspoon of gochugaru, 1 teaspoon of oligosaccharide, and a pinch of sesame seeds. Now, gently mix everything together with your hands. It’s best to toss them gently to ensure the seasoning coats the garlic scapes evenly.

Step 6

Voila! Your crispy and deliciously seasoned spicy garlic scape salad is ready. It has a deep flavor reminiscent of gochujang pickles, but with the fresh taste of garlic scapes, making it incredibly delicious! A tip: remember that blanching the garlic scapes for a short time is key to enjoying their signature crispiness. This dish is perfect as a side for rice or even as a snack with drinks!
