- 1 Tbsp gochujang (Korean chili paste)
- 1 tsp gochugaru (Korean chili flakes)

Hello everyone! Today, we’re going to make a spicy and sweet garlic scape salad seasoned with gochujang, known as a ‘rice thief’ because it makes you eat so much rice. It’s the perfect side dish to stimulate your appetite!

First, thoroughly wash the fresh garlic scapes under running water. Trim them into bite-sized pieces, about 4-5 cm long. Bring a pot of water to a rolling boil, adding a little salt. Once the water is boiling vigorously, add the prepared garlic scapes and blanch them very briefly, for **30 seconds to a maximum of 1 minute**. It’s crucial not to overcook them, as this will lose their crispiness!

Immediately after blanching, rinse the garlic scapes under cold water to quickly cool them down. Then, drain them thoroughly in a colander. Any remaining water could dilute the seasoning.
