Spicy Flavorful Petasites Pancake (Meowi Jeon)
How to Make Delicious Petasites Pancakes with Spicy Soy Sauce
Typically, when making savory pancakes (jeon), we need a dipping sauce. Today, I’m introducing a Petasites Pancake where the spicy soy sauce is already incorporated into the batter, so you won’t need a separate dipping sauce. Enjoy the convenience and flavor!
Petasites Pancake Ingredients
- Fresh Petasites (Meowi) leaves: 50g
- Carrot for sweetness: 55g
- Onion for a sweet aroma: 1/2 medium (approx. 50g)
- Egg for binding and richness: 1 large
- Pancake mix for crispiness: 70g
- Spicy soy sauce for a kick: 2 Tbsp
- Water for batter consistency: 100ml
- Cooking oil for frying: Generous amount
Optional Ingredient (Flavor Boost!)
- Cheddar cheese slice for extra flavor and creaminess: 1 slice
- Cheddar cheese slice for extra flavor and creaminess: 1 slice
Cooking Instructions
Step 1
First, thoroughly wash the petasites leaves, pat them dry, and finely chop them. Finely mince the carrot and onion as well. In a large bowl, combine the chopped petasites, minced carrot, minced onion, 1 large egg, 70g of pancake mix, 2 Tbsp of spicy soy sauce, and 100ml of water.
Step 2
Using a spatula or chopsticks, mix all the ingredients thoroughly until well combined and no dry lumps of pancake mix remain. You should achieve a smooth, pourable batter consistency.
Step 3
Heat a frying pan over medium heat and add a generous amount of cooking oil. Ladle portions of the batter onto the hot pan, spreading them into round, flat shapes. Fry for a few minutes on each side until golden brown and crispy. (If using cheddar cheese, you can fold the pancake in half once one side is cooked and place the cheese inside to melt before fully cooking.)
