Braised Mackerel with Daikon Radish and Radish Greens – A Fish Dish
With the radishes tasting so delicious, we decided to make a braised dish with them and also enjoy them sliced. Today, we’re making #MackerelBraise #MackerelWithRadishGreens #MackerelWithDaikon! The radish greens are truly the star, even more so than the radish itself. After boiling the greens and braising them with the radish, we add the mackerel and let it simmer. This dish is so good, they say you might disappear without even noticing! It’s a perfect accompaniment to rice.

- 1 Mackerel
- 400g Daikon Radish
- A handful of Radish Greens
- 1/2 Onion
- 2 Korean Green Chilies (Cheongyang)
- 1 Red Chili
- 1 Green Onion
Radish Greens Seasoning
- 0.7 Tbsp Doenjang (Soybean Paste)
- 0.5 Tbsp Minced Garlic

- 4 cups Water
- 1 Tea Bag (e.g., dried anchovies, kelp)
Braising Sauce
- 3 Tbsp Gochugaru (Korean Chili Flakes)
- 2 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (Anchovy)
- 0.7 Tbsp Minced Garlic
- 0.8 Tbsp Sugar
- 1 Tbsp Cheongju (Rice Wine) or Mirin
- A pinch of Ginger Powder
- 0.7 Tbsp Doenjang (Soybean Paste)
- 0.5 Tbsp Minced Garlic

Cooking Instructions
Step 1
To remove any fishy odor from the mackerel, soak it in rice water for a short while, then rinse and pat it dry. This step is crucial for a clean flavor.
Step 2
Cut the daikon radish into large, thick pieces. Slice the onion thinly. Finely chop the green and red chilies. Cut the green onion into thick diagonal pieces. Prepare the broth by simmering the tea bag in 4 cups of water for about 10 minutes. Let it cool.
Step 3
Place the cut daikon radish pieces at the bottom of a pot. Pour the prepared broth over the radish. Cooking the radish first allows it to absorb the flavors beautifully.

Cut the radish greens into about 4 sections. In a bowl, mix the radish greens with 0.7 Tbsp of doenjang and 0.5 Tbsp of minced garlic. Gently massage the ingredients together to lightly season the greens.

Arrange the seasoned radish greens on top of the radish in the pot. Bring to a boil over high heat and let it simmer until the radish is almost tender, about 10-15 minutes. Skim off any foam that rises to the surface.

While the radish and greens are cooking, let’s prepare the braising sauce. In a bowl, combine 3 Tbsp gochugaru, 2 Tbsp soy sauce, and 1 Tbsp fish sauce. Stir well.

Add 0.7 Tbsp minced garlic, 0.8 Tbsp sugar (adjust to your sweetness preference), 1 Tbsp cheongju (to help remove fishiness), and a pinch of ginger powder to the sauce. Mix everything thoroughly to create a delicious braising sauce.

Once the radish and greens are tender, carefully place the prepared mackerel pieces on top. Try not to disturb them too much after adding.

Generously brush the braising sauce over the mackerel. Finally, arrange the sliced onion, green chilies, red chilies, and green onion on top of the fish.
