  • 2 medium potatoes
  • 3 strips of bacon

Seasoning & Other Ingredients
  • 2 Tbsp potato starch
  • Pinch of black pepper (optional)
  • Small amount of brown rice oil or vegetable oil (for frying)

Cooking Instructions

Step 1

First, peel the potatoes thoroughly. Then, using a knife or mandoline, julienne the potatoes into very thin strips. The thinner the strips, the crispier the pancake will be. Rinsing the julienned potatoes in cold water can help remove excess starch for an even crispier result.

Step 2

To reduce the saltiness for your baby, it’s best to lightly blanch the bacon. Briefly dip the bacon strips in boiling water for about 10 seconds, then remove. Pat dry and thinly julienne the bacon, similar in thickness to the potatoes.

Step 3

In a large bowl, combine the julienned potatoes and bacon. If this is for baby food or a meal, it’s recommended to omit the pepper or use only a very tiny pinch. Add a light sprinkle according to your preference. ^^

Add 2 tablespoons of potato starch to the mixed potatoes and bacon. Toss well to coat all the ingredients evenly, creating a batter. Ensure the starch is mixed thoroughly. If the mixture is too wet, the pancake might become soggy, so adjust the amount of starch as needed.

Heat a frying pan with a generous amount of brown rice oil. Spread the mixture thinly and evenly onto the pan. Spreading it thinly in a round shape will ensure it cooks evenly and becomes delightfully crispy. Keep the heat at medium-low to prevent burning.
