- 3 stalks green onions
- 1/2 paper cup (100ml) soju or cheongju (rice wine)
- 1/2 onion
- 2 cheongyang peppers (spicy Korean chili peppers)
Spicy Seasoning Ingredients
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1/2 paper cup (100ml) mirin or cooking wine
- 2 Tbsp soy sauce
- 1 Tbsp sugar
- Pinch of black pepper
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
Soak the pork ribs in cold water for about 1 hour to remove any blood. This step is crucial for a clean flavor. Roughly chop the green onions into 3-4 cm pieces. Thinly slice the onion and diagonally slice the cheongyang peppers.
Step 2
In a large bowl, combine all the spicy seasoning ingredients: gochujang, gochugaru, mirin, soy sauce, sugar, black pepper, and minced garlic. Mix well until there are no lumps to create a delicious sauce. Preparing the sauce in advance allows the flavors to meld beautifully.
Step 3
Place the pork ribs in a heavy-bottomed pot. Add enough cold water to cover the ribs. Pour in 1/2 paper cup of soju or cheongju and add the bay leaf. Bring to a rolling boil over high heat and simmer for about 5-10 minutes. This initial boil helps to tenderize the meat and remove any impurities.
Step 4
Discard the boiling water and rinse the pork ribs thoroughly under cold running water. This second rinse removes any remaining scum or unpleasant odors, ensuring a cleaner and more tender result.
Step 5
Return the rinsed ribs to the pot. Add fresh water, just enough to cover about half of the ribs. Bring to a boil over high heat and cook uncovered for about 20 minutes. Start with high heat, then reduce to medium heat as needed.
Step 6
Once the ribs are becoming tender, add all of the prepared spicy seasoning sauce. Stir well to coat the ribs evenly. Reduce the heat to medium-low and let it simmer, stirring occasionally, until the sauce has thickened and is coating the ribs beautifully. This should take about 15-20 minutes.
Step 7
When the ribs are well-coated with the sauce and the liquid has reduced to a glossy glaze, add the chopped green onions, sliced onion, and sliced cheongyang peppers. Stir everything together and let it simmer for a few more minutes until the vegetables are tender and the flavors have melded. Serve hot for the best taste experience!
