Stew Ingredients
  • 20 assorted frozen jeon (various types)
  • 1 handful of kimchi (about 1 cup)
  • Anchovy broth (quantity as needed)
  • 1/2 medium onion
  • 1 stalk of green onion
  • 3 Korean chili peppers (adjust for spice level)
  • 1 red chili pepper (for color)

Seasoning
  • 1.5 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp fish sauce (or Korean soy sauce for soup)
  • 1 Tbsp regular soy sauce
  • 0.5 Tbsp sugar (balances the kimchi’s sourness)

Cooking Instructions

Step 1

First, prepare the vegetables. Wash them thoroughly. Slice the onion thinly, and cut the green onion and chili peppers into diagonal pieces. Chop the kimchi into bite-sized pieces.

Step 2

Make the anchovy broth: In a pot, combine anchovies and dried kelp with 5-6 cups of water. Bring to a boil, then remove the kelp. Strain out the anchovies and set the broth aside.

Step 3

Add the chopped kimchi and sliced onion to the anchovy broth. Bring it to a boil over high heat and let it simmer until the kimchi softens and the flavors meld.

Step 4

Once the kimchi is tender, add all the seasoning ingredients: gochugaru, fish sauce (or soy sauce for soup), regular soy sauce, and sugar. Stir well to combine. Taste and adjust seasoning if needed with more fish sauce or salt.

Step 5

When the seasoning is well incorporated and the onions look translucent, carefully add the frozen assorted jeon to the pot. Be gentle to prevent them from breaking apart.

Step 6

Once the jeon start to cook, add the diagonally sliced green onion, Korean chili peppers, and red chili pepper. Let it simmer for a few more minutes until everything is heated through. The spicy aroma of the chilies and the fresh flavor of the green onion will infuse the stew. Serve hot and enjoy!
