Spicy Beef and Radish Soup with Chives – A Fragrant Twist!

Ingredients
  • Beef (for soup) 300g
  • Korean radish (Mu) 1/3 medium (approx. 200g)
  • Chives 1 handful (approx. 30g)
  • Green onion 1 stalk
  • Soup soy sauce 1.5 Tbsp
  • Salt 1 Tbsp (or to taste)
  • Sesame oil 1 Tbsp
  • Water 600ml (approx. 3 cups)
  • Gochugaru (Korean chili powder) 1.5 Tbsp
  • Minced garlic 1 tsp

Cooking Instructions

Step 1

First, wash and peel the Korean radish. Dice it into bite-sized cubes. This preparation ensures the radish softens nicely as it cooks.

Step 2

Heat a pot over medium heat and add 1 Tbsp of sesame oil. Once the oil is warm, add the beef and stir-fry until it’s no longer pink. Searing the beef at this stage enhances its savory flavor.

Step 3

Once the beef has lost its pinkness, add the cubed radish to the pot. Continue to stir-fry them together for about 1 to 3 minutes, until the edges of the radish cubes begin to look slightly translucent. Stir-frying the radish beforehand will make the soup clearer and more refreshing.

Step 4

Now, pour in 600ml (about 3 cups) of water. Bring the soup to a boil, then add 1.5 Tbsp of soup soy sauce and 1 Tbsp of salt to season. It’s best to season gradually, as you can always add more later.

Step 5

Once the soup is boiling, stir in 1.5 Tbsp of gochugaru (Korean chili powder) and 1 tsp of minced garlic. Mix well and let it boil vigorously over high heat. Boiling allows the flavors to meld, creating a delicious spicy broth.

Step 6

After simmering for about 30 minutes, taste the soup. If it needs more seasoning, add salt or soup soy sauce to your preference. Once the seasoning is right, add the chopped green onion and let it simmer for a little longer.

Step 7

Finally, add the prepared chives to the pot. Cook them very briefly, just enough to wilt and turn bright green – about 1 minute or less. Overcooking chives will make them tough and diminish their fresh flavor and aroma.

Step 8
