Step 1

Hello everyone! Today, I’m introducing a recipe for kimchi fried rice, bursting with a delightful spicy and tangy flavor. It’s a wonderful meal that anyone can easily make if they have some well-fermented kimchi.

Step 2

Heat a pan over medium-high heat and stir-fry the thinly sliced pork belly until golden brown. Once the pork fat has rendered sufficiently, add the chopped green onions and stir-fry over low heat to create fragrant green onion oil. The aroma of the green onion oil will greatly enhance the flavor of the fried rice.

Step 3

Cut the kimchi into bite-sized pieces using scissors or a knife. Add the cut kimchi to the pan and stir-fry it with the pork belly and green onions until well combined. Adding 5 tablespoons of kimchi brine will make the fried rice moist and add more umami. Continue to stir-fry until the kimchi is slightly softened.

Step 4

Once the ingredients are well blended, add 2 tablespoons of oyster sauce to season and continue stir-frying. You can add a little soy sauce or gochujang for variation, but oyster sauce alone is sufficient to enhance the kimchi’s tanginess. Taste and adjust seasoning as needed.
