- Soju 1/2 cup (standard soju cup)

Cooking Instructions
Step 1
Ideally, soak the pork ribs in cold water to remove blood. If time is short, place the ribs in a pot, cover with water, and add 1 Tbsp doenjang, 2 bay leaves, 1/2 cup soju, and about 10 whole peppercorns. Bring to a rolling boil and simmer vigorously for about 10-15 minutes to thoroughly tenderize and remove any gamey odor. Rinse the braised ribs under cold water.
Step 2
Briefly blanch the bean sprouts in boiling water for about 30 seconds to 1 minute. Avoid overcooking, as they should remain slightly crisp.
Step 3
In a bowl, combine the braised pork ribs with the sauce ingredients: 5 Tbsp soy sauce, 1 Tbsp gochujang, 3 Tbsp gochugaru, 1 Tbsp minced garlic, 2 Tbsp oligosaccharide, 1 Tbsp sugar (or plum extract), 1 cup soju, and a dash of sesame oil. Mix well to ensure the ribs are evenly coated, and let them marinate.
Step 4
Transfer the marinated ribs to a wide pot or steamer. Add enough water to cover about half of the ribs. Add the onion, cut into large pieces, and bring to a boil over high heat. Once boiling, reduce the heat to medium-low, cover, and simmer for 20-30 minutes, allowing the ribs to cook through. Basting the ribs with the simmering sauce occasionally will enhance the flavor.
Step 5
Once the sauce has thickened slightly, add the sliced king oyster mushrooms and diagonally cut green onion. Continue to simmer for another 2-3 minutes, allowing the flavors to meld.

Arrange the blanched bean sprouts attractively on top of the braised ribs.
