  • Instant coffee powder 1 Tbsp
  • Whole peppercorns 10 pcs
  • Whole garlic cloves 5 pcs
  • Doenjang (soybean paste) 1 Tbsp
  • Soju 1/2 cup (standard soju cup)

For the Stew
  • Bean sprouts for steaming 1 bag
  • King oyster mushrooms 2 pcs
  • Wide glass noodles 1 handful (pre-soaked)
  • Green onion 1 stalk
  • Onion 1 pc

Cooking Instructions

Step 1

Ideally, soak the pork ribs in cold water to remove blood. If time is short, place the ribs in a pot, cover with water, and add 1 Tbsp doenjang, 2 bay leaves, 1/2 cup soju, and about 10 whole peppercorns. Bring to a rolling boil and simmer vigorously for about 10-15 minutes to thoroughly tenderize and remove any gamey odor. Rinse the braised ribs under cold water.

Step 2

Briefly blanch the bean sprouts in boiling water for about 30 seconds to 1 minute. Avoid overcooking, as they should remain slightly crisp.

Step 3

In a bowl, combine the braised pork ribs with the sauce ingredients: 5 Tbsp soy sauce, 1 Tbsp gochujang, 3 Tbsp gochugaru, 1 Tbsp minced garlic, 2 Tbsp oligosaccharide, 1 Tbsp sugar (or plum extract), 1 cup soju, and a dash of sesame oil. Mix well to ensure the ribs are evenly coated, and let them marinate.

Step 4

Transfer the marinated ribs to a wide pot or steamer. Add enough water to cover about half of the ribs. Add the onion, cut into large pieces, and bring to a boil over high heat. Once boiling, reduce the heat to medium-low, cover, and simmer for 20-30 minutes, allowing the ribs to cook through. Basting the ribs with the simmering sauce occasionally will enhance the flavor.

Step 5

Once the sauce has thickened slightly, add the sliced king oyster mushrooms and diagonally cut green onion. Continue to simmer for another 2-3 minutes, allowing the flavors to meld.

Step 6

Arrange the blanched bean sprouts attractively on top of the braised ribs.

Step 7

Finally, add the pre-soaked wide glass noodles. Cook for an additional 1-2 minutes until the noodles are tender and have absorbed the delicious sauce. Your spicy, sweet, and tender braised pork ribs are now ready!

Step 8

This spicy braised pork ribs dish is incredibly satisfying with a bowl of rice and also makes a fantastic pairing with beer or soju. It’s a crowd-pleasing flavor that everyone is sure to enjoy, so give this recipe a try! Enjoy your delicious meal!
