Ingredients
  • 1 Squid (cleaned)
  • 1/2 Carrot (thinly sliced)
  • 5 cloves Garlic (sliced or minced)
  • 1 bunch Green Onion (sliced diagonally)

Seasoning
  • 1.5 Tbsp Soy Sauce
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Minced Garlic
  • 1.5 Tbsp Cooking Wine (Mirin or similar)

Cooking Instructions

Step 1

First, prepare the squid thoroughly. Remove the skin and guts, then slice it into bite-sized pieces (about 2cm wide). (Refer to ‘10000 Recipe Know-how’ for more detailed cleaning instructions!)

Step 2

Thinly slice the carrot. Slice the garlic into thin pieces or mince it. Slice the green onions diagonally; this helps the seasoning distribute evenly and makes it taste better.

Step 3

Heat a deep pan or wok over high heat. Add the prepared squid, carrot, and garlic. Stir-fry quickly until the squid is just cooked through. The key is not to overcook it, so it doesn’t become tough.

Step 4

While the squid and vegetables are stir-frying, mix all the seasoning ingredients in a small bowl: 1.5 Tbsp soy sauce, 1 Tbsp gochugaru, 3 Tbsp gochujang, 1 Tbsp minced garlic, and 1.5 Tbsp cooking wine. Stir until well combined.

Step 5

Pour the prepared seasoning mixture over the squid and vegetables in the pan. Stir-fry on high heat for about 8 minutes until the seasoning coats everything well. Then, reduce the heat to medium-low, cover the pan, and let it cook for another 10 minutes. This step allows the flavors to meld deeply.

Step 6

As the stir-fried squid is nearing completion, prepare a fried egg. A sunny-side-up or over-easy egg adds a rich, creamy element that complements the spicy squid wonderfully.

Step 7
