- 204g Korean green chili peppers (Ggwari Gochu)
- 16g Garlic
- 16g Green onion
Sauce (based on 15cc)
- 4 Tbsp Soy sauce
- 1 Tbsp Fish sauce
- 1 Tbsp Sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Oligodang (corn syrup)
- A pinch of sesame oil
- A pinch of toasted sesame seeds
- 4 Tbsp Soy sauce
- 1 Tbsp Fish sauce
- 1 Tbsp Sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Oligodang (corn syrup)
- A pinch of sesame oil
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, soak the green chili peppers in water with a little vinegar for a while, then rinse them thoroughly under running water. This effectively removes pesticides and debris.
Step 2
Removing the stems from the green chili peppers will not only shorten your cooking time but also allow the sauce to penetrate better into the peppers, making them even more delicious.

Drain the washed green chili peppers completely using a sieve. It’s important to remove as much water as possible, as remaining moisture can cause oil to splatter during cooking.

Once the water is removed, prick the green chili peppers multiple times with a fork or toothpick. This creates small holes, allowing the sauce to be absorbed thoroughly inside the peppers, resulting in a much tastier dish.

Thinly slice the garlic and chop the green onion. Both garlic and green onion are used to create an aromatic base when stir-fried. You can adjust the quantities to your preference.

In a bowl, combine 4 Tbsp soy sauce, 1 Tbsp fish sauce, 1 Tbsp sugar, and 1 Tbsp gochugaru. Mix well to create the sauce mixture beforehand. Using fish sauce adds a savory depth that enhances the flavor.

Heat a generous amount of cooking oil in a pan. Stir-fry the green onions and garlic over medium-low heat, adjusting the heat to prevent burning. Stir-frying them until golden brown will release their wonderful aroma and flavor.

Once the pan is fragrant with garlic and green onion aromas, add the drained green chili peppers and stir-fry them in the infused oil. It’s important to let the peppers absorb the flavors from the garlic and green onion oil.

Pour in the prepared soy sauce mixture and stir-fry with the green chili peppers for about 1 minute. Ensure the sauce coats the peppers evenly.

At this stage, add 1 Tbsp of oligodang. This will give the green chili peppers a nice sheen and add sweetness, creating a delightful balance of spicy and sweet flavors! This is the secret to a delicious sweet and savory sauce!
