Easy Gwipo Stir-fry Recipe – A Perfect Side Dish
Introducing a delicious Gwipo (dried shredded fish) stir-fry recipe that’s perfect for everyone, from kids’ snacks to adult beverages. It’s made with simple ingredients and is a fantastic addition to your home-cooked meals. Its chewy texture and savory-sweet sauce make it an irresistible rice companion!
Ingredients
- 6 sheets of dried shredded fish (Gwipo)
- 3 Tbsp mayonnaise
- 1 Tbsp soy sauce
- 2 Tbsp mirin (or cooking wine)
- 2 Tbsp cooking oil
- 2 Tbsp oligodang (corn syrup)
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the dried shredded fish (Gwipo). To prevent it from breaking easily, it’s best to cut it into long strips about 1 to 1.5 cm wide using scissors.
Step 2
Prepare a dry pan without preheating it. Place the cut Gwipo onto the pan.
Step 3
Lightly stir-fry the Gwipo over low heat. Cook for about 1-2 minutes until it becomes soft and pliable, not hard. Be careful not to burn it.
Step 4
Transfer the well-stir-fried Gwipo to a wide bowl. Add 3 tablespoons of mayonnaise and gently mix it with your hands until the Gwipo is evenly coated. This step helps to tenderize the fish further.
Step 5
Now, let’s make the sauce. Add 2 tablespoons of cooking oil to a frying pan, and keep the heat very low. It’s important to prevent the sauce from burning.
Step 6
With the heat still very low, add 2 tablespoons of mirin (or cooking wine) to the pan. Mirin helps to remove any fishy smell and adds a nice sheen.

Next, add 1 tablespoon of soy sauce. Soy sauce is the key ingredient that adds umami to the Gwipo dish.

Once the sauce in the pan begins to bubble, add all the Gwipo that you’ve coated with mayonnaise. Stir-fry quickly for about 1-2 minutes, ensuring the sauce coats the Gwipo evenly.

When the sauce has mostly absorbed into the Gwipo and thickened, turn off the heat immediately. Overcooking can make the Gwipo tough.

After turning off the heat, drizzle 2 tablespoons of oligodang (corn syrup) over the pan. Oligodang adds a mild sweetness and enhances the glossy finish.

Finally, sprinkle 1 tablespoon of toasted sesame seeds and gently toss again to prevent the Gwipo pieces from sticking together. The nutty sesame seeds will add wonderful flavor.
Step 12
Transfer the finished Gwipo stir-fry into a storage container, and it’s ready to serve! Let it cool slightly before storing it in a container for banchan (side dish). Enjoy it anytime!
