Main Ingredients
  • Well-fermented Kimchi: About 1 small head (approx. 200-300g)
  • Pork Shoulder: 400g (cut into bite-sized pieces)

Sauce Ingredients
  • Gochujang (Korean chili paste): 2 Tbsp
  • Soy Sauce: 1 Tbsp
  • Sugar: 1 Tbsp (adjust to taste)
  • Gochugaru (Korean chili flakes): 1 Tbsp (adjust spiciness)
  • Minced Garlic: 1 Tbsp
  • Black Pepper: A pinch (dash)
  • Cooking Wine (Mirin, etc.): 3 Tbsp
  • Plum Extract: 1 Tbsp (for sweetness and aroma)

Cooking Instructions

Step 1

First, lightly pat the pork shoulder with paper towels to remove excess moisture. Then, cut the pork into bite-sized pieces. Place the cut pork in a bowl, add 3 tablespoons of cooking wine, and gently mix and massage it (jomul-jomul) to remove any gamey odor and tenderize the meat. Adding a dash of black pepper at this stage will also enhance the flavor.

Step 2

Now, let’s make the stir-fry sauce. In a separate bowl, combine 2 tablespoons of gochujang, 1 tablespoon of soy sauce, 1 tablespoon of sugar, 1 tablespoon of gochugaru, 1 tablespoon of minced garlic, and 1 tablespoon of plum extract. Mix them well. (If you prefer it spicier, add more gochugaru; if you like it sweeter, add a bit more sugar or plum extract.)

Step 3

Put on a pair of clean disposable gloves. Pour the prepared sauce over the pre-seasoned pork shoulder. Gently mix and massage the ingredients together (jomul-jomul) so that the sauce evenly coats every piece of meat. Ensuring uniform coating is key.

Step 4

Lightly shake out any excess brine from the kimchi and cut it into bite-sized pieces. Avoid chopping it too finely, as it might become mushy when stir-fried. Add the cut kimchi to the bowl with the sauced pork and mix gently again. Make sure the kimchi blends well with the sauce.

Step 5

Heat a pan over medium heat. Add the kimchi and pork mixture to the pan and begin to stir-fry. Stir gently, making sure the meat doesn’t burn. Continue cooking until the kimchi wilts and the pork is lightly browned on the surface.

Step 6

Once the pork is fully cooked and the kimchi and sauce have melded together, releasing a delicious aroma, sprinkle sesame seeds generously over the top. Stir-fry for another moment (hwiririryk~) after adding the sesame seeds to enhance the nutty fragrance. Transfer the finished Kimchi Pork Stir-fry to a nice plate for a delightful presentation!
