I recently made this green pepper salad using the flavorful sauce from my pickled perilla leaves! This sauce is fantastic as a ssamjang (Korean dipping paste) for grilled meats, and it also makes a wonderful green pepper salad on its own. Its spicy yet sweet flavor is so good, you’ll finish a whole bowl of rice in no time!

  • 3 Tbsp doenjang (fermented soybean paste)
  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 2 Tbsp maesilcheong (plum extract)
  • 1 Tbsp sugar
  • 1/3 finely chopped onion
  • 2 Tbsp banana vinegar or regular vinegar
  • 1 Tbsp sesame seeds
  • 2 finely chopped Cheongyang peppers (optional, for extra spice)
  • 1 Tbsp sesame oil

Cooking Instructions

First, let’s prepare the delicious sauce. Finely chop the onion and Cheongyang peppers. Using banana vinegar will give the sauce a sweeter and milder flavor compared to regular vinegar. In a bowl, combine the doenjang, gochujang, gochugaru, minced garlic, maesilcheong, sugar, chopped onion, banana vinegar (or regular vinegar), sesame seeds, chopped Cheongyang peppers, and sesame oil. Mix everything thoroughly with a spoon until well combined. It’s important to stir gently to ensure there are no clumps.

Prepare about 5 fresh green peppers. Making this sauce ahead of time and storing it in the refrigerator is incredibly convenient! It’s perfect for preparing side dishes or enjoying with grilled meats.
