Main Ingredients for Jeyuk Bokkeum
  • 400g Pork Shoulder (cut into bite-sized pieces)
  • A little cooking oil (for coating the pan)

Ingredients for Blender Paste (Fruits/Vegetables & Seasoning)
  • 1/2 Onion (chopped coarsely)
  • 20g White part of Leek (chopped coarsely)
  • 1/6 Apple (seeds removed, chopped coarsely)
  • 2 Korean Green Chilies (adjust to your spice preference, chopped coarsely)
  • 4-5 cloves Garlic
  • 2 Tbsp Mirin (or cooking wine)
  • 2 Tbsp Soy Sauce

Spicy and Sweet Jeyuk Bokkeum Sauce
  • 1.5 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Soy Sauce
  • 1/2 Tbsp Gochugaru (Korean chili flakes, spicy variety – add more for extra heat)
  • 1 Tbsp Gochugaru (Korean chili flakes, regular)
  • 1/3 Tbsp Ginger juice (or minced ginger)
  • 2 Tbsp Cooking Syrup (e.g., corn syrup, rice syrup)
  • 1/3 Tsp Curry Powder (enhances flavor)
  • 1 Tbsp Sesame Oil
  • 4 cracks Black Pepper

Cooking Instructions

Step 1

Prepare the vegetables and fruits for the blender. Coarsely chop the onion, the white part of the leek, and the Korean green chilies. Remove the core from the apple and chop it coarsely. Also, prepare the whole garlic cloves.

Step 2

Place the chopped onion, leek, green chilies, apple, and garlic cloves into a blender. Add 2 tablespoons of mirin and 2 tablespoons of soy sauce. Blend until the mixture is smooth using an immersion blender or a regular blender. This will create a smoother and more well-absorbed marinade.

Step 3

In a large bowl, place the prepared 400g of pork shoulder. Pour all the blended marinade ingredients over the pork.

Step 4

Gently mix the pork and marinade with your hands, ensuring the pork is evenly coated. Let it marinate for about 10 minutes to allow the flavors to penetrate the meat.

Step 5

While the pork is marinating, prepare the Jeyuk Bokkeum sauce. In a separate bowl, mix together the gochujang, soy sauce, spicy gochugaru, regular gochugaru, ginger juice, cooking syrup, and curry powder. After 10 minutes, add this sauce mixture to the bowl with the pork and mix thoroughly. Let it marinate for a little longer for the flavors to meld.

Step 6

Now it’s time to stir-fry. Lightly coat a pan with cooking oil and wipe it with a paper towel to create a thin, even layer. Heat the pan over high heat until it’s hot. Add the marinated pork to the hot pan and stir-fry quickly over high heat. Once the pork starts to curl and cook, reduce the heat to medium.

Step 7

While stir-frying over medium heat, be mindful of the temperature to prevent burning. Continue to stir-fry until the pork is fully cooked. Once cooked, turn off the heat. Finish by adding 1 tablespoon of sesame oil and about 4 cracks of black pepper for extra aroma and flavor.
