Main Ingredients
  • 2 large potatoes
  • 1/3 carrot (about 5cm long)
  • 1/3 spam or ham (about 5cm long)
  • 2 Korean chili peppers (Cheongyang peppers)

Seasoning Ingredients
  • 2 Tbsp soup soy sauce (standard Korean tablespoon)
  • 2 Tbsp regular soy sauce (standard Korean tablespoon)
  • 2 Tbsp oligosaccharide (standard Korean tablespoon)
  • 2 Tbsp sugar (standard Korean tablespoon)
  • 1 Tbsp maesil-cheong (plum extract) (standard Korean tablespoon)
  • 1/2 Tbsp minced garlic (standard Korean tablespoon)
  • 1 Tbsp gochugaru (Korean chili flakes) (standard Korean tablespoon)
  • Pinch of black pepper
  • Pinch of sesame seeds

Cooking Instructions

Step 1

First, peel the potatoes and cut them into large cubes. Cut the carrot and spam/ham into similar-sized pieces. Finely chop the Korean chili peppers and remove the seeds (you can adjust the spiciness). Prepare all ingredients.

Step 2

Let’s make the seasoning for this delicious braised potato dish! In a bowl, combine 2 Tbsp soup soy sauce, 2 Tbsp regular soy sauce, 2 Tbsp oligosaccharide, 2 Tbsp sugar, 1 Tbsp maesil-cheong, 1/2 Tbsp minced garlic, and 1 Tbsp gochugaru. Mix well. (We’ll add the pepper and sesame seeds later!)

Step 3

Heat 1-2 Tbsp of cooking oil in a frying pan over medium-low heat. Add the cut potatoes, carrots, and spam/ham and sauté until lightly browned, stirring occasionally to prevent sticking.

Step 4

Once the edges of the potatoes start to look slightly translucent (after about 2-3 minutes), pour in all the prepared seasoning mixture. Stir gently to coat the ingredients. Then, add 1 cup (about 200ml using a paper cup) of water.

Step 5

Now, cover the pan with a lid and reduce the heat to medium-low. Let it simmer until the potatoes are tender. It’s helpful to open the lid occasionally to check if the sauce is burning and gently shake the pan to mix.

Step 6

After simmering for about 5 minutes and the potatoes are somewhat cooked, add the chopped Korean chili peppers and lower the heat to low. You’ll start to smell the spicy aroma.

Step 7

Finally, stir and cook for another 3 minutes. The sauce will thicken slightly, infusing the ingredients with rich flavor. Just before turning off the heat, sprinkle in a pinch of black pepper and a pinch of sesame seeds. Your spicy, savory, and sweet braised potatoes are ready! Serve hot over rice and enjoy!
