Main Ingredients
  • 500g boneless, skinless chicken thighs (cut into bite-sized pieces)
  • 2 handfuls of shishito peppers (halved)
  • 3 Tbsp cooking oil
  • 5 dried chilies (roughly chopped)
  • 2 stalks of green onion (1/2 stalk finely chopped, the rest cut into large pieces)
  • 1/8 head of cabbage (cut into large pieces)
  • 1 handful of whole garlic cloves

Seasoning Ingredients
  • 1/2 cup water (approx. 100ml)
  • 1.5 Tbsp sugar
  • 0.5 Tbsp minced garlic
  • 1/3 cup soy sauce (approx. 67ml)

Cooking Instructions

Step 1

[Prepare Ingredients] 1. Cut the chicken thighs into bite-sized pieces. Roughly chop the dried chilies, removing seeds if desired. 2. Finely chop about half of one green onion stalk for the sauce, and cut the remaining 1.5 stalks into larger pieces for stir-frying. 3. Trim the stems off the shishito peppers and cut them in half. Cut the cabbage into large pieces.

Step 2

Heat 3 tablespoons of cooking oil in a large pan or wok over medium-high heat. Add the prepared chicken thighs.

Step 3

Once the chicken begins to release its juices, add the chopped dried chilies, the finely chopped green onion, and the whole garlic cloves. Stir-fry to release their aromas.

Step 4

Continue to stir-fry the chicken until it is nicely browned and cooked through. This step is crucial for developing flavor and removing any gamey taste from the chicken.

When the chicken is browned, add the large pieces of cabbage and 1.5 tablespoons of sugar. Stir-fry together. The sugar will caramelize and coat the ingredients, adding a delicious depth of flavor.
