Spicy and Silky Soft Tofu Stew (Sundubu Jjigae)

Easy Sundubu Jjigae Recipe Using a Store-Bought Seasoning Mix

Sundubu Jjigae is a dish I often make because the recipe is so simple! It saves time and tastes great, so I decided to try using a pre-made seasoning mix for it. This recipe offers a quick and delicious way to enjoy a comforting Korean stew.

Main Ingredients
  • 1 packet Soft Tofu (about 300-400g)
  • 1 packet Clam Soft Tofu Stew Seasoning Mix (store-bought)
  • 2 cups Water (approx. 400ml)
  • 1/2 Onion
  • 1/2 Green Onion (Scallion)
  • 2 Korean Chili Peppers (adjust to your spice preference)

Cooking Instructions

Step 1

In a pot, combine the store-bought Clam Soft Tofu Stew Seasoning Mix and 2 cups of water. Bring to a boil over high heat. Stir well to dissolve the seasoning mix.

Step 2

Once the broth is boiling, carefully add the packet of soft tofu. You can add the tofu in large chunks or gently break it up with a spoon. Reduce the heat to medium-low and simmer, being careful not to break up the tofu too much.

Step 3

Thinly slice the onion. Cut the green onion and Korean chili peppers diagonally into bite-sized pieces. If you’re adding other vegetables, trim the base of enoki mushrooms and separate them. Slice zucchini into half-moon shapes. Cutting the vegetables into manageable pieces will make them easier to enjoy with the broth.

Step 4

Add all the prepared vegetables to the pot. Continue to simmer over medium-low heat for about 2-3 minutes, allowing the vegetables to soften and their flavors to meld with the broth. If you’re adding enoki mushrooms or zucchini, cook them until tender.

Step 5

Finally, crack the egg into the center of the stew. Let it cook for about 30 seconds without stirring, until the egg white starts to set. If desired, sprinkle a pinch of gochugaru on top. Your delicious Sundubu Jjigae is ready! For an extra treat, try eating the soft-boiled egg with the tofu and rice – it’s absolutely delicious!
