  • 50g pre-cleaned beef tripe (Yang)
  • 100g Korean radish (Mu)
  • 1/4 onion
  • 1 stalk green onion
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

First, prepare 50g of pre-cleaned beef tripe (Yang). It’s already washed and ready to use, saving you a lot of preparation time.

Step 2

Thinly slice 100g of Korean radish (Mu) into bite-sized pieces, about 0.5cm thick. This radish will add a wonderful freshness to the broth.

Step 3

Peel and thinly slice 1/4 onion. The onion will add sweetness and depth of flavor to the soup.

Step 4

Wash and cut 1 stalk of green onion into roughly 4-5cm lengths. It will release a fragrant aroma as it cooks.

Step 5

Now, let’s stir-fry. In a pot, add a little cooking oil. Then, add the sliced radish, green onion, onion, the prepared beef tripe (Yang), and 1 Tbsp of minced garlic. Stir-fry over high heat for about 2-3 minutes until the ingredients begin to look slightly golden and fragrant. This step is crucial for developing a deeper flavor.

Step 6

Once you can smell the delicious aroma of the vegetables, add 1 Tbsp of gochugaru (Korean chili flakes) and stir-fry for another minute. Toasting the chili flakes in the oil enhances their color and spicy flavor.

Step 7

When the vegetables are about halfway cooked, pour in 500ml of beef bone broth (Sagol-yuksu) and 2 Tbsp of soy sauce for soup (Guk-ganjang). Bring the soup to a boil over high heat, then reduce the heat to medium-low and simmer for about 5 minutes. Letting it simmer allows the flavors to meld beautifully.

Step 8

Finally, add a pinch of black pepper. You can also season with salt to your taste. Simmer for another moment, and your delicious beef tripe (Yang) soup is ready to be enjoyed!
