  • 1 slice processed cheese
  • 2 strips ham
  • Panko breadcrumbs, as needed

Cooking Instructions

Step 1

First, prepare the egg garnish for the salmon rolls. Crack 2 fresh eggs into a bowl, add a pinch of salt to enhance the flavor, and whisk well. Lightly grease a heated pan over low heat and pour in the beaten egg mixture thinly to make a delicate omelet. Cook until golden brown on both sides. Once cooled, cut the egg omelet into thin strips.

Step 2

Wash the fresh cucumber thoroughly. Slice it into thin, long julienne strips, perfect for kimbap filling. The crisp texture of the cucumber will wonderfully complement the other ingredients.

Step 3

Prepare the apple for a touch of refreshing tartness. Wash it, remove the core, and slice it into thin julienne strips similar to the cucumber. The apple’s subtle sweetness and tanginess will cut through the richness of the salmon, making the rolls even more delicious.

Step 4

Prepare the imitation crab sticks for the kimbap. Cut them lengthwise into pieces that match the length of the kimbap roll, typically in halves or thirds. Prepping them like this will make rolling the kimbap much easier.

Step 5

Now, let’s roll the delicious keto salmon kimbap! Place the kimbap seaweed sheet on a rolling mat with the rough side facing up. Layer one slice of processed cheese over the seaweed, followed by the fresh lettuce leaves. Arrange the prepared imitation crab sticks, julienned cucumber, apple strips, generous pieces of salmon, and finally, the julienned egg omelet in that order. Be mindful not to overfill, as this can cause the roll to break.

Step 6

Using the rolling mat, firmly roll the kimbap, pressing the fillings in as you go to create a tight, compact roll. Lightly moisten the edge of the seaweed with water to help seal it securely. Once rolled, cut the kimbap into bite-sized pieces. (Tip: Lightly dampen your knife with water before slicing to prevent the rice from sticking and ensure clean cuts.)

Step 7

Next, we’ll make the crispy ham and cheese rolls. Trim the crusts off the white bread slices. Using a rolling pin, flatten the bread slices until they are thin and pliable. This makes it easier to roll them tightly and hold the filling securely.

Step 8

On the flattened bread, place one slice of processed cheese and two strips of ham side-by-side. Avoid placing the fillings too close to the edges; keeping them slightly inward will prevent them from sliding out when rolled.

Step 9

Roll the bread tightly around the ham and cheese. Dip the rolled bread first into the beaten egg mixture, ensuring it’s fully coated. Then, generously coat it with panko breadcrumbs for that delightful crispy texture when fried. Ensure the breadcrumbs adhere well for maximum crispiness.

Step 10

Heat a generous amount of olive oil in a pan over medium heat. Carefully place the prepared ham and cheese rolls into the hot oil. Fry them, turning them occasionally, until all sides are golden brown and crispy. Be sure to manage the heat to prevent burning.

Step 11

Once the ham and cheese rolls are golden and crispy, remove them from the pan and let them cool slightly. Once they are set and won’t unravel, cut them in half. The melted cheese inside will make them even more appealing.

Step 12

Finally, arrange your beautifully made salmon kimbap and crispy ham and cheese rolls in your lunchbox. Their vibrant colors and delicious combination will make your special outing even more enjoyable and memorable. Have a wonderful time with your tasty lunchbox!
