Scone Dough Ingredients
  • 100g cake flour (low-gluten flour)
  • 20g sugar
  • 2g baking powder

Cooking Instructions

Step 1

First, prepare the ingredients that will add flavor to your scones. Peel and finely chop the onion. Chop the scallion into bite-sized pieces. Dice the Spam into approximately 1-2cm cubes.

Step 2

Heat a pan over medium heat. Add the diced Spam and cook until lightly browned, rendering its fat. Remove the cooked Spam and set aside. Add a little cooking oil to the same pan, then add the minced garlic, chopped onion, and scallions. Sauté over low heat until fragrant and the onions become translucent. Once fragrant, remove from heat and spread the mixture thinly on a plate to cool completely. This sautéing process enhances the sweetness and umami of the ingredients.

Step 3

In a large bowl, combine the cake flour, sugar, and baking powder. Sift these dry ingredients 2-3 times. Sifting ensures that the dry ingredients are evenly distributed and helps create a lighter scone texture.

Step 4

Add the cold, diced butter to the sifted dry ingredients. Using a pastry blender, a bench scraper, or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs, with some pea-sized pieces of butter remaining. This is key to achieving a flaky and crisp scone.

Step 5

Make a well in the center of the flour and butter mixture and crack in the egg. Use a spatula or bench scraper to gently mix everything together until a shaggy dough forms. Be careful not to overmix, as this can develop gluten and make the scones tough. Lightly mix until no dry flour is visible, then gradually add the milk, 1 tablespoon at a time, mixing until the dough just comes together. Avoid overworking the dough.

Step 6

Once the dough starts to come together, gently fold in the sautéed Spam, onion, scallion mixture, chopped cheddar cheese, and a pinch of black pepper. Mix until just combined. Wrap the dough tightly in plastic wrap and refrigerate for at least 30 minutes. This resting period allows the fats to firm up and the flavors to meld. After chilling, turn the dough out onto a lightly floured surface, gently press it into a rectangle about 1-1.5cm thick, then re-wrap and chill for another 15 minutes. This makes it easier to cut.

Step 7

Preheat your oven to 190-200°C (375-400°F). Cut the chilled dough into your desired scone shapes and place them on a baking sheet lined with parchment paper. Before baking, brush the tops with the egg yolk for a beautiful golden-brown finish. Bake for 30-35 minutes, or until the scones are golden brown and puffed up.
