To create the signature smooth milk ice flakes, pour 500ml of milk into a freezer-safe container (like an ice cube tray) the night before or at least 6 hours in advance. Freeze until solid. Ensuring it’s completely frozen is key.

Take the solidly frozen milk and place it in a bingsu machine or a blender. Shave or blend it finely. If you blend it too finely, it might become very dense like ice cream; for a more traditional bingsu texture, you can blend it slightly coarser, depending on your preference. If using a blender, stop occasionally to mix the chunks and continue blending.
