Soft Rice Flour ‘Injeolmi’ for Babies

Baby Rice Cake Made Only with Rice Flour and Milk [Baby Injeolmi]

Since glutinous rice can be too chewy and potentially dangerous for babies, I’ve made baby ‘injeolmi’ using rice flour for a safer and softer texture. Perfect for little ones!

Ingredients
  • Rice flour 50g
  • Milk 80g
  • A little grain bar (crushed)
  • Sesame oil 1 Tbsp

Cooking Instructions

Step 1

First, prepare 50g of rice flour. If you have time, sifting the rice flour beforehand will result in an even softer texture.

Step 2

Pour 80g of milk into the prepared rice flour. You can use baby formula or regular milk.

Step 3

Stir well with a spatula or spoon until the rice flour and milk are thoroughly combined without any lumps. It might seem a bit thin at first.

Step 4

Transfer the mixed batter to a microwave-safe bowl and microwave for about 1 minute. The batter will start to become chewy.

Step 5

The batter removed from the microwave might appear set. At this point, stir and break up the batter thoroughly with a spatula or spoon. If it’s not cooked enough, microwave in 30-second increments, checking the consistency each time.

Step 6

Knead the batter diligently until it becomes smooth and has a chewy,떡 (tteok – Korean rice cake) like texture. Repeatedly stretching and folding the dough with your hands will achieve this texture.

Step 7

Once the kneaded batter is sufficiently chewy, it’s time to shape it. If the dough is too sticky, add a little more rice flour to adjust the consistency.

Step 8

Add 1 Tbsp of sesame oil for a nutty flavor and mix it well into the dough. Ensure the sesame oil coats the dough evenly. Now, take small portions of the dough and roll them into bite-sized balls or log shapes suitable for your baby.

Step 9

Instead of traditional soybean powder, crush a baby snack like a rice cracker (‘tteokppang’) or a grain bar into fine pieces inside a zip-top bag. Roll the shaped ‘injeolmi’ into the crushed crumbs, ensuring they are coated evenly on all sides. (I used a grain bar for an extra nutty taste).

Step 10

Your soft and nutty baby ‘injeolmi’ is ready! Coating them with the grain bar adds a subtle sweetness and nutty flavor that babies seem to love. Enjoy this safe and healthy snack for your little one.
