Soft Potato and Egg Salad Sandwich Filling

- 1 medium potato
- 5 eggs
- 60g sandwich ham
- 3 strips imitation crab meat
- 1/2 apple

Cooking Instructions
Step 1
Boil the eggs in water for about 10-12 minutes until hard-boiled. Once cooked, rinse them under cold water to cool, then peel and set aside.
Step 2
Peel the potato and wash it thoroughly. Place the potato in a pot, cover with water, and boil over medium heat for about 20-25 minutes until tender. You can check for doneness by piercing it with a fork; it should go in easily.
Step 3
While the potatoes and eggs are boiling, finely shred or chop the imitation crab meat. Dice the sandwich ham into small pieces (about 0.5cm). For the apple, remove the core and finely chop it, with or without the peel. (Chopping the apple small will help it blend better with the salad.)
Step 4
While the boiled potato is still warm, mash it thoroughly with a fork or a masher until smooth, ensuring there are no lumps. Add the peeled hard-boiled eggs to the mashed potato and mash them together with a fork. (Mash the eggs well so that the whites and yolks are combined.) Then, add the finely chopped imitation crab meat, ham, and apple to the same bowl.
Step 5
Add 10 tablespoons of mayonnaise and 1 tablespoon of xylose sugar to the salad bowl. Mix well until all ingredients are evenly coated.
Step 6
Gently mix all the ingredients with the mayonnaise until well combined. Finally, stir in 1 tablespoon of grated Parmesan cheese, if desired, for an extra flavor boost. Your delicious potato and egg salad is now ready! This salad is perfect for making sandwiches.
