Main Ingredients
- 500g Dried Squid Threads (Hong Jin Mi Chae)
- 4 Tbsp Mayonnaise
- A pinch of Sesame Seeds
- 4 Tbsp Minced Garlic
- A little Sesame Oil
Seasoning Ingredients
- 3 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean Chili Powder)
- 2 Tbsp Soy Sauce (Jin Ganjang)
- 2 Tbsp Plum Extract (Maesil Cheong)
- 3 Tbsp Cooking Wine (Mirin)
- 4 Tbsp Water
- 2 Tbsp Gochujang (Korean Chili Paste)
- A tiny pinch of Ginger Powder
- 3 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean Chili Powder)
- 2 Tbsp Soy Sauce (Jin Ganjang)
- 2 Tbsp Plum Extract (Maesil Cheong)
- 3 Tbsp Cooking Wine (Mirin)
- 4 Tbsp Water
- 2 Tbsp Gochujang (Korean Chili Paste)
- A tiny pinch of Ginger Powder
Cooking Instructions
Step 1
First, prepare the dried squid threads by cutting them into bite-sized pieces, about 5-7 cm long. If they are too long, they can be inconvenient to eat.
Step 2
In a bowl, combine the prepared dried squid threads with 4 tablespoons of mayonnaise and 2 tablespoons of cooking wine. Gently mix and massage the ingredients into the squid threads. This step will make the squid threads softer and help eliminate any fishy odors.
Step 3
In a separate small bowl, combine the seasoning ingredients: 3 tablespoons of sugar, 2 tablespoons of gochugaru, 2 tablespoons of soy sauce, 2 tablespoons of plum extract, the remaining 3 tablespoons of cooking wine, 4 tablespoons of water, 2 tablespoons of gochujang, and a very small pinch of ginger powder. Mix well to create a flavorful sauce.
Step 4
Heat a pan over medium-low heat. Add a generous amount of cooking oil and 4 tablespoons of minced garlic. Sauté the garlic until fragrant and lightly golden brown, being careful not to burn it. It’s important to cook the garlic thoroughly to infuse the oil with its delicious aroma.
Step 5
Once the garlic is lightly browned and fragrant, pour the prepared seasoning sauce into the pan.
Step 6
Bring the sauce to a boil, then reduce the heat to medium and simmer for 1-2 minutes to slightly thicken the sauce. This process helps to deepen and enhance the flavor of the sauce.
Step 7
After the sauce has simmered nicely, turn off the heat completely. Add the dried squid threads that were pre-mixed with mayonnaise and cooking wine. Pour in any remaining sauce from the bowl and use a spatula to thoroughly coat the squid threads, ensuring the sauce is evenly distributed. Finally, stir in 4 tablespoons of oligosaccharide (adjust sweetness to your liking), a little sesame oil, and a sprinkle of sesame seeds. Mix once more gently, and your soft and delicious stir-fried dried squid threads are ready! While delicious when hot, the flavors meld even better and taste more exquisite after cooling slightly.
