Seasoning
  • 2 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Maesilcheong (Korean plum syrup) – for sweetness and gloss
  • 2 Tbsp Vinegar – for a tangy kick
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Sesame Oil – for nutty aroma
  • A pinch of Sesame Seeds – for garnish

Cooking Instructions

Step 1

To make handling easier, cut the dried pollock roe into bite-sized pieces, about 5-7cm long, using scissors or kitchen shears. Adjust the size for comfortable eating, especially for children.

Step 2

Lightly rinse the cut dried pollock roe under cold or lukewarm water. Avoid rinsing for too long, as this can diminish its savory flavor. After rinsing, thoroughly squeeze out as much water as possible with your hands. Excess moisture can dilute the seasoning and shorten the shelf life.

Step 3

In a clean bowl, combine all the seasoning ingredients: 2 Tbsp gochujang, 1 Tbsp gochugaru, 3 Tbsp maesilcheong, 2 Tbsp vinegar, and 1 Tbsp minced garlic.

Using a spatula or spoon, mix the seasoning ingredients thoroughly until well combined and smooth. Ensure the maesilcheong and vinegar are fully dissolved to create a harmonious sauce.

Add the thoroughly squeezed dried pollock roe to the prepared seasoning sauce. For added texture and flavor, you can also include thinly sliced onions or carrots at this stage.

Now, generously coat the dried pollock roe with the seasoning. Using your hands (wearing gloves is recommended) or a spatula, toss vigorously to ensure every strand is evenly coated with the sauce. This thorough mixing is key to a delicious result. Finally, drizzle in 2 Tbsp of sesame oil and sprinkle with a pinch of sesame seeds, toss once more, and serve attractively in a dish.
