Ingredients
  • 1 cup smoked duck (cut into bite-sized pieces)
  • 1/2 green bell pepper (seeds removed, finely chopped)
  • 1/2 red bell pepper (seeds removed, finely chopped)
  • 1/2 yellow bell pepper (seeds removed, finely chopped)
  • 1/2 red onion (finely chopped)
  • 3 Tbsp oyster sauce
  • 2 pinches salt
  • 1 pinch black pepper
  • 1 serving cooked rice (approx. 200g)

Cooking Instructions

Step 1

First, prepare the ingredients for the fried rice filling. Remove the stems and thoroughly scrape out the seeds from the green bell pepper, red bell pepper, and yellow bell pepper. Then, finely chop them into pieces about 0.5 cm in size, similar to the chopped onion. This will add vibrant color and make your gimbap look more appealing.

Step 2

Since the smoked duck is already cooked, lightly stir-frying it in a pan will remove excess fat, making it more palatable and less greasy. Sauté the smoked duck in a pan over medium-low heat for about 2-3 minutes. If a lot of oil is released, you can gently wipe it away with a paper towel.

Step 3

Once the excess oil is removed, finely chop the smoked duck into pieces of about 0.5 cm, similar in size to the chopped vegetables. This ensures the duck blends well with the rice and provides a pleasant texture when eaten.

Step 4

Now, let’s make the delicious fried rice! Heat a lightly oiled frying pan over medium heat. Add the chopped red onion, green bell pepper, and bell peppers, and sauté until they become translucent. Once the vegetables are partially cooked, add the chopped smoked duck and stir-fry together. Then, add the warm cooked rice and 2 tablespoons of oyster sauce. Continue to stir-fry for 2-3 minutes until the rice grains are separated and fluffy. Season with 2 pinches of salt and 1 pinch of black pepper. Your flavorful smoked duck fried rice is now ready! (Adjust the amount of oyster sauce to your preference.)

Step 5

It’s time to roll the gimbap! Place a sheet of gimbap seaweed on a bamboo rolling mat. Spread the prepared smoked duck fried rice thinly and evenly over the seaweed. (Using seasoned seaweed will add extra umami and flavor; regular gimbap seaweed also works well.) While the rice is still warm, use the mat to roll it tightly and firmly into a gimbap shape. Finally, slice the roll into 1.5-2 cm thick pieces. Your impressive smoked duck fried rice gimbap is complete! You can also make them into cute, mini gimbap.
