Today, I’m sharing a super simple recipe for Smoked Duck and Kimchi Stir-fry using leftover smoked duck. The classic pairing of kimchi and duck is so good that it’s hard to go wrong, making this a reliably delicious dish every time.
Main Ingredients
- 180g Smoked Duck
- 1 cup Kimchi (fermented napa cabbage)
Cooking Instructions
Step 1
First, cut the smoked duck into bite-sized pieces, about halves. Cutting them too small might cause them to break apart during cooking, so aim for a manageable size.
Step 2
In a pan or pot, add about 1 cup of well-fermented kimchi. Drizzle in 1 tablespoon of perilla oil. Add 0.5 tablespoon of sugar to balance the kimchi’s sourness, and stir-fry over high heat. We’ll be stir-frying this with the duck later, and the duck releases a lot of its own fat, so be mindful not to add too much perilla oil initially. Using sour, aged kimchi will yield the best flavor!
Step 3
If the kimchi becomes too dry while stir-frying, add about 50ml of water little by little and continue to cook until the kimchi is softened and well-cooked. Stir-frying the kimchi thoroughly beforehand helps it meld beautifully with the duck.
Step 4
Once the kimchi is nicely sautéed, add all the pre-cut smoked duck (180g). Stir in 0.5 tablespoon of oyster sauce for an extra umami boost. Continue to stir-fry, adjusting the heat, until the smoked duck is browned and cooked through, allowing the smoky flavor of the duck and the sweet-sourness of the kimchi to meld together.
Step 5
When the smoked duck and kimchi are perfectly stir-fried, turn off the heat. Finish by sprinkling a pinch of black pepper for aroma. Finally, add 1 tablespoon of toasted sesame seeds and gently mix everything together for a delicious Smoked Duck and Kimchi Stir-fry.
