Since we’re using the sweet potatoes with their skins on, thorough washing is essential. Scrub them well under running water with a brush to remove any dirt or residue.

Now it’s time to slice the sweet potatoes thinly. To prevent browning, prepare a large bowl filled with water beforehand. If using a mandoline slicer, place it over the bowl and slice the sweet potatoes directly into the water as you cut them, preserving their freshness.

Drain the sliced sweet potatoes from the water and rinse them again gently under running water to remove excess starch. Transfer them to a colander to drain.

This is a crucial step for achieving extra crispy sweet potato chips. Thoroughly pat the surface of the sweet potato slices dry with paper towels. Residual moisture can cause oil to splatter during frying or result in soggy chips.

Step 5

Heat a generous amount of cooking oil in a pan over medium heat. Once the oil is adequately hot (around 170°C/340°F if you have a thermometer), carefully add the dried sweet potato slices.
