Simple Homemade Tomato Pasta

Main Ingredients
- Spaghetti (about the thickness of a 500-won coin)
- 2 fresh tomatoes
- 1/2 bottle of store-bought tomato sauce
- 1 onion
- 1 packet of vegetable soup mix
- 1 Cheongyang chili pepper (optional, for spice)

- 1 Tbsp salt (for pasta water)
- Salt to taste
- Pepper to taste

- Parsley flakes to taste
- 3 Tbsp olive oil

Cooking Instructions
Step 1
First, bring a pot of water to a boil and add 1 tablespoon of salt. Salting the pasta water seasons the spaghetti from the inside out, making it more flavorful.

Once the water is at a rolling boil, add the spaghetti. Cook for 8 to 10 minutes, or until al dente, depending on your preference and the pasta’s thickness. Taste a strand to check for doneness.

While the pasta is cooking, let’s prepare the sauce. In a blender, combine 1/2 bottle of the store-bought tomato sauce, the 2 peeled tomatoes, 1 tablespoon of minced garlic, the Cheongyang chili pepper (seeds removed if you prefer less heat), a pinch of salt, and a pinch of pepper. Blend until smooth.

Heat 3 tablespoons of olive oil in a large pan over medium heat. Once shimmering, add the chopped onion and a pinch of pepper. Sauté until the onion becomes translucent and fragrant, about 5-7 minutes.

When the onions are softened and fragrant, pour in the blended tomato sauce mixture. Bring to a gentle simmer and cook for about 3-5 minutes, allowing the flavors to meld together.

Drain the cooked spaghetti, reserving about 1 cup of the pasta water. Add the drained spaghetti directly to the pan with the sauce. Pour in about 1/2 cup of the reserved pasta water to help emulsify the sauce and coat the pasta evenly. Toss everything together over medium heat until the pasta is well-coated with the sauce.

Transfer the saucy spaghetti to a serving plate. Garnish with extra parsley flakes and a grind of fresh pepper if desired. Your delicious homemade tomato pasta is ready!

Now, let’s make the vegetable soup. In a small bowl or measuring cup, combine the vegetable soup mix with 800ml of cold water. Whisk thoroughly until there are no lumps. Starting with cold water helps prevent clumping.

Pour the dissolved soup mixture into a saucepan. Place over medium heat and stir constantly, making sure to scrape the bottom of the pot to prevent sticking. Bring to a gentle simmer.
