Step 1

First, ramen noodles and milk are the core ingredients for this recipe, so make sure to have them ready. Egg, onion, garlic, and green onion are optional ingredients that add flavor; you can add or omit them according to your preference.

Let’s start preparing the ingredients. Thinly slice the garlic. Slice the onion into thick strips, and finely chop the green onion.

Step 3

Heat a pan over medium heat with just a little cooking oil. Add the sliced garlic and onion and sauté until fragrant. Once the onion starts to turn translucent, add about two to three pinches of the ramen soup base and stir-fry together. This step significantly deepens the flavor.

Step 4

Add the chopped green onion and sauté briefly until its aroma is released. You don’t need to cook it for too long.

Step 5

Boil plenty of water in a pot, and once it’s boiling, add the ramen noodles and cook for only about 1 to 2 minutes. Cooking the noodles until slightly underdone (al dente) is key, as they will continue to cook in the sauce, maintaining a pleasantly chewy texture.

Step 6

Transfer the partially cooked ramen noodles to the pan with the sautéed garlic, onion, and green onion. Pour in the cold milk. Immediately add the egg, stirring quickly to combine. If you prefer a more authentic carbonara-style richness, you can use only the egg yolk. (Adding the whole egg is fine, but if you want a richer cream pasta feel, use only the yolk or omit the egg altogether.) Stir rapidly to mix all ingredients.

Step 7

Add the remaining ramen soup base and dried vegetable packet. Simmer until the noodles are fully cooked and the sauce has thickened to your desired consistency. Once the sauce coats the noodles nicely, finish with a grind of black pepper. For an extra touch, try topping with grated Parmesan cheese!
