How to Make Egg Drop Soup, Light & Comforting Soup Dish
My husband requested a gentle and comforting soup, so I made this simple Egg Drop Soup for him. It’s perfect for a light dinner, warming you up from the inside and making for a satisfying, yet easy meal.^^ (I usually cook with less salt, so please taste and adjust seasoning as needed.)
Egg Drop Soup Ingredients
- 2 large eggs
- 20g green onion (about 1/4 stalk), thinly sliced
- 0.5 Tbsp minced garlic
- 1 red chili pepper (for garnish and mild spice), thinly sliced diagonally
- 2 concentrated soup stock cubes (e.g., anchovy or kelp flavor)
- 700ml water (about 3 cups)
- Pinch of black pepper

- 1 Tbsp tuna extract (can substitute with soy sauce or fish sauce)

Cooking Instructions
Step 1
▶ Prepare your ingredients: 2 large eggs, 2 soup stock cubes, and 0.5 Tbsp minced garlic. ▶ Thinly slice the green onion crosswise. Thinly slice the red chili pepper diagonally after removing the seeds for a decorative touch and a hint of spice.

▶ Crack the 2 eggs into a bowl. Whisk them gently with a fork or whisk until the yolks and whites are well combined, creating a smooth egg mixture. Avoid over-whisking.

▶ Pour 700ml of water into a pot and add the 2 soup stock cubes. Bring to a boil over medium heat and let the stock cubes dissolve completely. (Tip: You can also boil the water first and then add the stock cubes for convenience.)

▶ Once the broth is simmering, slowly drizzle the prepared egg mixture into the pot in a circular motion. The egg will begin to cook and form delicate ribbons.

▶ Resist the urge to stir immediately after adding the egg! Wait until the egg is mostly set and starts to float up in soft, fluffy curds. Then, gently stir with a spoon a couple of times to break them up slightly for a beautiful presentation and tender texture.

▶ Reduce the heat to low. Stir in 1 Tbsp of tuna extract to add depth of flavor. Taste the soup and add a pinch of salt if needed, adjusting the seasoning to your preference. The goal is a mild and comforting taste.

▶ Add the sliced green onions, red chili peppers, and minced garlic to the pot. Simmer over medium heat for about 1-2 minutes until the vegetables are tender-crisp. (Important Note: Cooking on high heat can cause the soup to boil over quickly. Medium-high or medium heat is best to maintain a gentle simmer and preserve the vegetables’ texture.)

▶ Turn off the heat. Sprinkle a pinch of black pepper according to your taste and give it a final gentle stir. Your comforting and delicious Egg Drop Soup is now ready to be enjoyed!^^
