First, prepare the enoki mushrooms. Gently rinse the enoki mushrooms under running water to remove any dirt or debris, then trim off the tough base with a knife. Next, cut the mushrooms in half; this helps the sauce penetrate better and makes them easier to eat.

Now, let’s prepare the other vegetables. Cut the green onion into long strips, matching the length of the enoki mushrooms. Slice the red and green chili peppers lengthwise into thin strips, removing the seeds. Mince the garlic finely.
