  • 3 eggs

Savory & Sweet Sauce
  • 2 Tbsp soy sauce
  • 8 Tbsp water
  • 1 Tbsp sugar
  • Minced chives (optional, for enhanced flavor)

Cooking Instructions

Step 1

First, crack the 3 eggs into a bowl and beat them well with a whisk. Lightly grease a pan, heat over medium-low heat, and pour in the beaten eggs. Cook the eggs until about 60% done, gently stirring or swirling the pan as they cook – this is the key to a soft texture! Avoid overcooking; slightly undercooked eggs will give a softer texture. Transfer the partially cooked eggs to a separate plate.

Step 2

In a small bowl, combine 2 Tbsp soy sauce, 8 Tbsp water, and 1 Tbsp sugar. Whisk together to create the savory and sweet sauce. For an extra boost of chive aroma, you can add a little minced chive to this sauce. (The minced chives are optional.)

Step 3

Thinly slice the onion. Heat about 1 Tbsp of oil in the pan over medium heat and sauté the sliced onion until translucent. Once the onion is softened, add the chives (cut into 2-3cm lengths) and the prepared savory and sweet sauce. Stir-fry together for just 1-2 minutes until the chives are slightly wilted. Be careful not to overcook the chives, as they can lose their pleasant crispness.

Step 4

Add the partially cooked eggs (from step 1) back into the pan. Gently mix them with the chive and onion mixture, allowing the sauce to coat them. Cook for another 30 seconds, stirring gently to avoid breaking up the eggs too much. Handle the eggs with care to maintain their soft texture.

Step 5

Prepare a bowl of warm cooked rice. Spoon the cooked chive and egg mixture generously over the top of the rice. Instead of mixing everything in the pan, topping the rice allows you to fully appreciate the distinct flavors and textures of each ingredient. Serve and enjoy by mixing it all together before eating!
