Easy and Delicious Stir-Fried Sea Mustard: A Recipe Using Wild Sea Mustard
I made this delicious stir-fried sea mustard using wild sea mustard that I collected myself, which I had portioned and frozen. Adding perilla seed powder makes it wonderfully nutty and incredibly satisfying. This sea mustard stir-fry is a super simple side dish that doubles as a hearty staple for your pantry.

Cooking Instructions
Step 1
First, gently blanch the thoroughly washed wild sea mustard in boiling water for about 1-2 minutes. It’s important not to overcook it, so it retains a firm, pleasant texture.
Step 2
Once the sea mustard turns a vibrant green color, immediately remove it from the boiling water. Overcooking can make it mushy.
Step 3
Quickly immerse the blanched sea mustard in cold water to stop the cooking process and cool it down. This step helps maintain its crisp texture and bright color.
Step 4
Drain the cooled sea mustard well on a sieve or colander.
Step 5
Gently squeeze out excess water from the sea mustard with your hands. Be careful not to squeeze too hard, as this can cause nutrient loss.

Cut the drained sea mustard into bite-sized pieces, about 2-3 cm long. You can chop it finer if you prefer.
Step 7
Now, let’s prepare the stir-fry. Heat 3 Tbsp of grapeseed oil in a pan over medium-low heat. Add 3 Tbsp of minced garlic and sauté until fragrant, releasing its aroma.

Once the garlic is fragrant, add the prepared sea mustard to the pan and stir-fry over medium heat. Keep stirring to prevent it from sticking to the bottom of the pan.

Thinly slice the onion and carrot. Add them to the pan with the sea mustard and continue to stir-fry until the vegetables become slightly translucent.

Pour in 2 Tbsp of soup soy sauce and stir well to ensure all the ingredients are evenly coated and seasoned. The soup soy sauce adds a savory depth to the dish.

Add 1 Tbsp of sesame oil and stir again to combine everything thoroughly. The nutty aroma of the sesame oil enhances the overall flavor.

Finally, add a generous 2 Tbsp of perilla seed powder. Stir gently to distribute the nutty flavor throughout the dish. Be careful not to overcook after adding the perilla seed powder, as it can become bitter. Mix it in quickly.

After stir-frying for a short while, taste the dish. Adjust the seasoning with more soup soy sauce or salt if needed.

For an extra boost of umami, add 2 Tbsp of fish sauce (Chamchi-aek) to season the dish.

After adding the fish sauce, taste it again and adjust the seasoning as necessary.
