Savory Soy Sauce Brine
  • 1 cup Soy Sauce
  • 1 cup Rice Vinegar
  • 1/2 cup Sugar
  • 1 cup Water

First, place 1/2 cup of sugar into a bowl.

Pour in 1 cup of rice vinegar.

Next, add 1 cup of soy sauce.

Finally, add 1 cup of water and stir everything well. The basic ratio for this soy sauce brine is Water:Soy Sauce:Vinegar:Sugar = 1:1:1:0.5. Feel free to adjust this ratio to your preference, but be sure to taste it and adjust the amount of sugar or vinegar accordingly. The best part is that you don’t need to boil this brine! Simply stir until the sugar dissolves, and your sauce is ready.

Step 5

Wash the cucumbers and onion thoroughly, then cut them into bite-sized pieces. You can slice the cucumbers into 0.5cm thick rounds or cut them into quarters lengthwise. Peel the onion and cut it into thick slices.

Sterilize a glass jar by boiling it in hot water, then ensure it is completely dry. Layer the prepared cucumbers and onions into the sterilized jar.

Step 7

Pour the prepared soy sauce brine over the vegetables, ensuring they are fully submerged. Your delicious soy sauce pickled cucumbers and onions are now complete! They are tasty right away, but for an even richer flavor, refrigerate for about a day before enjoying.
