Main Ingredients
  • 600g Pork Neck (Moksal) – thicker cuts are recommended for juiciness
  • 1 Onion (thinly sliced)
  • 1/4 Carrot (thinly sliced)
  • 2 Tbsp Sugar
  • 2 Tbsp Mirin (or Rice Wine)
  • 2 Tbsp Minced Garlic
  • 2 Tbsp Oligodang (Korean corn syrup, or corn syrup)
  • 2-3 pinches Black Pepper

Cooking Instructions

Step 1

First, let’s prepare the delicious marinade. In a bowl, combine 5 Tbsp soy sauce and 5 Tbsp water. Add 2 Tbsp sugar, 2 Tbsp mirin, and 2 Tbsp oligodang for sweetness and depth. For that pungent garlic aroma, add 2 Tbsp minced garlic, and 2-3 pinches of black pepper to help tenderize the meat and reduce any gamey smell. Whisk everything together until well combined.

Step 2

To ensure the best flavor and prevent any unwanted odors, gently pat the pork neck slices with paper towels to remove any excess blood or moisture. This step is crucial for a clean, savory taste.

Step 3

Place the patted pork neck into the prepared marinade. Add the thinly sliced onion and carrot to the mix. These vegetables will release their natural sweetness and add wonderful aroma as they cook with the pork. Gently toss the pork and vegetables to coat them thoroughly with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes. For an even deeper flavor, marinate for an hour or longer.

Step 4

Heat a pan over medium-low heat. Place the marinated pork neck and vegetables in the pan. Cook slowly, turning the pieces occasionally, until they are nicely browned and cooked through. Be careful not to use high heat, as this can burn the marinade before the pork is cooked. Cook until the pork is tender and the edges are beautifully caramelized. Enjoy your delicious homemade marinated pork neck!
