Savory Dried Radish Greens Soybean Paste Stew
How to Cook a Rich and Savory Dried Radish Greens Soybean Paste Stew
Enjoy a deeply flavorful and comforting stew made with dried radish greens and homemade soybean paste. This dish warms you from the inside out and is a perfect, hearty meal to pair with a bowl of rice.
Main Ingredients
- 300g Cooked Dried Radish Greens: Use pre-cooked and tender radish greens.
- 1L Rice Water: The milky water from rinsing rice adds a wonderful depth and savory quality to the broth.
- 1 Coin Stock Cube: Enhances the umami of the broth. (Can be substituted with anchovy broth or similar)
Cooking Instructions
Step 1
First, rinse the cooked dried radish greens thoroughly under running water to remove any dirt or impurities. Trim off any tough stems and cut the greens into bite-sized pieces, about 1-2 cm long. Cutting them too long can make them difficult to eat.
Step 2
Place the prepared radish greens in a mixing bowl. Add 1 tablespoon of homemade soybean paste and 1/3 tablespoon of minced garlic. Gently mix with your hands, ensuring the seasoning is evenly distributed throughout the greens. Marinating them beforehand will infuse the broth with deeper flavor.
Step 3
Now, let’s prepare the broth. Pour 1 liter of rice water into a pot and add 1 coin stock cube. Bring it to a rolling boil over high heat to allow the flavors to meld.
Step 4
Once the rice water is boiling vigorously, add all the marinated radish greens to the pot. Bring it back to a boil over high heat, then reduce the heat to medium-low.
Step 5
Continue to simmer over medium-low heat for about 10 minutes, or until the radish greens are tender. Finally, add the diagonally sliced scallion and simmer for another moment. Your delicious and savory dried radish greens soybean paste stew is ready to be enjoyed!
