While I love fish sushi, today I’m excited to share a special treat: sirloin steak sushi, bursting with juicy flavor! Once you top the sushi rice with perfectly grilled beef, you might want to keep it all to yourself! The crisp onions and the sweet and sour sushi rice harmonize beautifully for an exquisite taste. Enjoy this delightful sushi with your loved ones on any special occasion.
Main Ingredients
- 200g Beef Sirloin Steak
- 1 bowl of cooked rice (warm)
- 1/2 Onion
- A little cooking sake or mirin (to remove meat odor)
- Wasabi (Japanese horseradish) to taste
Teriyaki Sauce & Garnish
- 3 Tbsp Teriyaki Sauce
- 2 Tbsp Water
- A few sprouts of Kaiware radish (for garnish)
- Pickled cucumber
- Pickled beetroot
- Miso soup (optional)

Cooking Instructions
Step 1
First, thinly slice the beef into bite-sized pieces and lightly season with pepper. Thinly slice the onion and soak it in cold water for about 10 minutes to remove its pungent and sharp taste. Drain the water thoroughly. This step ensures a crisp texture and enhances the sweetness.
Step 2
Heat a lightly oiled pan over high heat. Quickly sear the seasoned beef slices until they are golden brown on the outside. Reduce the heat to medium-low and continue to cook until the inside is cooked through. Be careful not to overcook, as it can become tough.
Step 3
In the same pan, combine 3 tablespoons of teriyaki sauce and 2 tablespoons of water. Stir well. Add the cooked beef and let it simmer until the sauce coats the meat and reduces. Once the sauce has thickened slightly, turn off the heat and let the beef rest in the sauce to absorb the flavors.
Step 4
While the rice is still warm, add the sushi vinegar mixture (rice vinegar, sugar, salt) and gently mix it into the rice with a rice paddle, being careful not to mash the grains. Fan the rice as you mix to cool it down quickly, resulting in fluffy, distinct grains.

Once the rice has cooled slightly, shape it into bite-sized oval or round portions for sushi. Apply a small amount of wasabi onto each piece of sushi rice, adjusting the quantity to your preference. A little goes a long way!
Step 6
Carefully place a slice of the savory teriyaki-glazed beef on top of each wasabi-coated sushi rice portion. Arrange the sushi pieces attractively on a plate. Placing the rice first, then the wasabi, and finally the beef makes assembly much easier.
