Savory Beef Miso Soup for Kids

Tired of the same old beef and radish or beef and seaweed soup for your little one? Try this delicious beef miso soup using Japanese miso paste! We’ve added tender Korean beef and plenty of kid-friendly vegetables to create a nutritious and incredibly tasty soup. Its comforting, savory broth is sure to make your child gobble up a whole bowl of rice!
Ingredients
- 150g Korean beef (for soup), cut into bite-sized pieces
- 1 potato (small)
- 1/2 onion (small)
- 1/3 zucchini
- 1/2 pack enoki mushrooms
- 2 Tbsp miso paste
- 500ml water
Cooking Instructions
Step 1
First, pour 500ml of water into a pot. Whisk in 2 tablespoons of miso paste until fully dissolved. Once the water begins to simmer, reduce the heat to medium-low.
Step 2
Prepare the vegetables for the soup. Dice the potato, onion, and zucchini into bite-sized cubes, about 1cm in size. You can also slice the zucchini into half-moons if preferred.
Step 3
To remove excess blood from the beef, gently pat it dry with paper towels, then soak it in cold water for about 15 minutes. Properly draining the blood ensures a clean and fresh-tasting broth. Once drained, cut the beef into pieces about 2-3cm in size.
Step 4
Once the miso-infused water starts boiling, add the prepared diced vegetables and the drained beef. Bring to a boil over high heat, then reduce to medium heat and simmer until the vegetables and beef are tender.
Step 5
When the ingredients are almost cooked through, trim the base of the enoki mushrooms, separate them into strands, and add them to the pot. Enoki mushrooms cook very quickly, so avoid overcooking them. Simmer for another 1-2 minutes.
Step 6
Taste the soup and adjust the seasoning as needed. The saltiness of miso paste can vary, so if the flavor needs a boost, add a little more miso paste. For a subtle touch, a tiny pinch of salt can be used. If the soup is too salty, you can add a bit more water to dilute it and achieve the desired taste.
