Main Ingredients
- 1 bowl of warm cooked rice (approx. 200g)
- 2 crab sticks (approx. 60g)
- 2 eggs
- A little wild chives (or green onions)
- 1 perilla leaf (optional, adds a fragrant touch)

Cooking Instructions
Step 1
First, prepare one bowl of warm cooked rice, which will be the base of your fried rice. If using cold rice, warming it in the microwave beforehand will yield better results.
Step 2
Prepare the crab sticks into bite-sized pieces. Gently shredding them by hand preserves their natural texture, making the dish even more delicious. Aim for thin shreds about 2-3 cm long, rather than very finely minced pieces.
Step 3
Chop the vegetables that will add color and texture to your fried rice. Peel the carrot and finely dice it into 2-3mm pieces. Mince the onion similarly. For the King Oyster mushrooms, trim the tough ends, rinse lightly under running water, pat dry, and tear into bite-sized pieces. Finely chop the wild chives (or green onions).
Step 4
Heat a pan over medium heat, add a generous amount of cooking oil, and stir-fry the diced carrots and mushrooms first. As the vegetables release their moisture, a delicious aroma will begin to rise.
Step 5
Once the carrots and mushrooms are slightly tender, push them to one side of the pan. Pour the beaten eggs into the empty space. Sprinkle a pinch of sea salt into the eggs and gently whisk them in one direction to create scrambled eggs. Reduce the heat slightly when the eggs are about 70-80% cooked.
Step 6
When the scrambled eggs are softly set, gently mix them with the vegetables in the pan. Then, add the minced onion and chopped wild chives (or green onions), and stir-fry until the onions become translucent. The sweetness of the onions and the fragrance of the chives will enhance the overall flavor of the fried rice.
Step 7
Add the bowl of cooked rice to the pan, along with the prepared crab sticks, minced garlic, and 2/3 tablespoon of oyster sauce. Oyster sauce plays a crucial role in adding umami to the fried rice.
Step 8
Gently toss and mix everything with a spatula, being careful not to mash the rice grains. Once the rice and ingredients are evenly combined, pour 1 tablespoon of soy sauce around the edges of the pan and continue to stir-fry. This allows the soy sauce’s flavor to permeate the entire dish. (Adjust the amount of soy sauce to your preference.)
Step 9
