How to Make Flavorful Beef Brisket Curry Udon at Home
I often cook at home, so there are ingredients I always keep stocked in my fridge or pantry. Udon noodles, beef brisket, and curry powder are among them! Today, I’m going to use these three favorite ingredients to make Beef Brisket Curry Udon! It’s always exciting to cook with ingredients I love!
Main Ingredients
- 200g beef brisket
- 1 packet udon noodles
- 1 onion
- 150g oyster mushrooms
Cooking Instructions
Step 1
First, peel and thinly slice one onion. The natural sweetness of the onion will deepen the flavor of the curry.
Step 2
Lightly rinse the oyster mushrooms under running water, then tear them apart into strands. Their chewy texture complements the curry udon beautifully.
Step 3
Finely mince five dried chili peppers (peperoncino) after removing the stems. You can adjust the amount of chili peppers to control the spiciness.
Step 4
Heat a pot over medium heat, then add the frozen beef brisket without thawing and start to cook. This is the first step to bringing out the brisket’s rich, savory flavor.
Step 5
Beef brisket is a fatty cut, so it releases a lot of delicious natural oil as it cooks. Therefore, you don’t need to add any extra oil to the pot; cooking the brisket in its own rendered fat will create a deeper flavor!
Step 6
Once the brisket has rendered a good amount of fat, add the sliced onion, torn oyster mushrooms, and minced chili peppers. Stir-fry over high heat until the vegetables soften and their flavors meld with the brisket.
Step 7
When the onions become translucent and sweet, pour in 500ml of water and let it simmer for a bit longer until the ingredients are tender. This is the process of creating the flavorful curry broth base.
Step 8
Once all the ingredients are cooked, add 100g of spicy curry powder, ensuring it dissolves without lumps. Stir well with a spatula or ladle and simmer until it reaches your desired consistency. Your delicious beef brisket curry base is ready!
Step 9
Now, it’s time to cook the udon noodles that will accompany your dish. Add the udon noodles to plenty of boiling water, gently separate them to prevent sticking, and cook for about 2 minutes. Keeping the udon noodles perfectly al dente is key.

Drain the cooked udon noodles in a colander, then immediately rinse them under cold water. Adding a few ice cubes while rinsing will make the noodles even bouncier and chewier. Your dish is almost complete!

In a deep serving bowl, artfully arrange the bouncy udon noodles. Then, generously ladle the warm, rich beef brisket curry alongside the noodles.
