Main Ingredients
  • 40g dried seaweed (rehydrated)
  • 5 fresh abalones (gutted and cleaned)

Seasoning & Broth
  • 1 Tbsp sesame oil (perilla oil can also be used)
  • 1 liter anchovy and kelp broth (rice water or plain water are also options)
  • 3 Tbsp soy sauce for soup or fish sauce (adjust to taste)

Cooking Instructions

Step 1

First, soak the dried seaweed in cold water for about 10 minutes until fully rehydrated. Adjust the soaking time depending on how the seaweed swells.

Step 2

Once rehydrated, gently squeeze the seaweed with your hands to wash away any impurities. Rinse it thoroughly in clean water two to three times to remove its saltiness and any fishy smell.

Step 3

Scrub the abalone shells and flesh clean with a brush. Separate the abalone meat from the shell. Slice it thinly. In a pan with 1/2 Tbsp of sesame oil, lightly stir-fry the sliced abalone for a moment to bring out its savory flavor. Be careful not to overcook, as it can become tough. Set the stir-fried abalone aside.

Step 4

Chop the washed and drained seaweed into bite-sized pieces (about 3-4 cm). In a pot, heat the remaining 1/2 Tbsp of sesame oil and stir-fry the chopped seaweed for about 1-2 minutes. Stir-frying the seaweed deepens the broth’s flavor.

Step 5

Pour the 1 liter of prepared anchovy and kelp broth into the pot with the stir-fried seaweed and bring it to a boil over high heat. Once it reaches a rolling boil, reduce the heat to medium-low, cover, and simmer gently for at least 15-20 minutes. The longer it simmers, the softer the seaweed and the richer the soup’s flavor will become.

Step 6

Once the broth has developed sufficient flavor, add the reserved stir-fried abalone and simmer for another moment. Season the soup with 3 Tbsp of soy sauce for soup or fish sauce. It’s best to season gradually, tasting as you go, rather than adding too much at once. Simmer for just 1-2 more minutes to finish.
