Cooking Instructions
Step 1
Today, we’ll be using our all-purpose bibim sauce to make not only a sweet and tangy Bibim Guksu but also a sophisticated seasoned whelk salad.
Step 2
First, prepare the core of the sauce: Gochujang and Gochugaru in a 1:1 ratio. Place 2 Tbsp of Gochujang and 2 Tbsp of Gochugaru into a bowl.
Step 3
Add 2 Tbsp of white sugar to bring in sweetness. You can adjust the sugar amount according to your preference.
Step 4
Add 4 Tbsp of vinegar to provide that signature tanginess. If you prefer less sourness, start with 3 Tbsp.
Step 5
Don’t forget to add 1 Tbsp of minced garlic for depth of flavor. Using fresh minced garlic will enhance the taste even further.
Step 6
To subtly enhance the umami, use a very small amount of MSG, just about 10 grains, almost as if you’re barely adding anything.
Step 7
Add 0.5 Tbsp of toasted or ground sesame seeds for a nutty aroma. This all-purpose bibim sauce makes enough for 2-3 servings, making it incredibly convenient to use whenever needed for dishes like Bibim Guksu or whelk and noodle salad. (Tip: Always drizzle 1 Tbsp of sesame oil just before finishing the dish or right before serving. Adding sesame oil beforehand can cause the sauce to spoil during refrigeration.)
Step 8
For Bibim Guksu, top the cooked noodles generously with your desired toppings (e.g., seaweed) and a good amount of the pre-made all-purpose bibim sauce.
Step 9
Even without many additional ingredients, this dish is incredibly delicious when you’re lacking an appetite! Enjoy your moist and flavorful Bibim Guksu.
Step 10
*Using the All-Purpose Bibim Sauce for Whelk Salad: Finely julienne the cabbage, carrot, and onion. Place the canned whelks and river snails along with the prepared vegetables into a bowl. Add 1-2 Tbsp of the all-purpose bibim sauce and a splash of sesame oil, then mix well. This creates an easy and impressive appetizer or special dish in no time!
