Main Ingredients
  • 10 fresh apples
  • 2 thoroughly washed beets

Dressing Ingredients
  • 200ml Extra Virgin Olive Oil
  • 200ml Sweet Yuzu Jam (Yuja Cheong)
  • 50g Fine Salt
  • 50g Freshly Ground Black Pepper
  • 50ml Apple Cider Vinegar

Cooking Instructions

Step 1

First, wash the beets thoroughly to remove any soil. Then, julienne them into thin strips. Soak the julienned beets in cold water for about 10 minutes to gently release some of their vibrant red color; this helps prevent the salad from becoming too intensely colored. Drain them well and set aside.

Step 2

Wash the apples well, with or without peeling, and remove the cores. Julienne the apples to a similar thickness as the beets. If you’re concerned about the apples browning, you can lightly toss them with a bit of lemon juice or soak them in cool water for a short while after slicing.

Step 3

In a large mixing bowl, combine the julienned beets and apples. Now, let’s prepare the delicious dressing. Add the Extra Virgin Olive Oil, sweet Yuzu Jam, fine salt, freshly ground black pepper, and fragrant apple cider vinegar to the bowl. Whisk everything together until well combined. Pour this dressing over the apples and beets, and gently toss to ensure all ingredients are evenly coated. Using chopsticks or tongs can help mix without bruising the ingredients.
