Stone crop, also known as ‘dolnamul’ (돌나물), is a resilient herb that even sprouts between rocks. It’s known for its excellent properties in reducing fever and detoxifying the body. Furthermore, it’s packed with calcium and vitamin C, making it a highly beneficial vegetable. Today, we’re making a delicious stone crop salad by gently tossing these fresh greens with a sweet and tangy gochujang-based dressing. It’s perfect for when you need a refreshing side dish or your appetite needs a little boost!
Main Ingredients
- Stone Crop (Dolnamul) 100g
- 1/2 small Onion
Tangy Gochujang Dressing
- Gochujang (Korean chili paste) 1 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Vinegar 1 Tbsp
- Maesil Extract (Plum Extract) 1 Tbsp
- Sugar 1 tsp
- Minced Garlic 1/2 Tbsp
- Sesame Oil 1/2 Tbsp
- Toasted Sesame Seeds 1 tsp
- Gochujang (Korean chili paste) 1 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Vinegar 1 Tbsp
- Maesil Extract (Plum Extract) 1 Tbsp
- Sugar 1 tsp
- Minced Garlic 1/2 Tbsp
- Sesame Oil 1/2 Tbsp
- Toasted Sesame Seeds 1 tsp
Cooking Instructions
Step 1
Gently rinse the fresh stone crop under running water multiple times to remove any dirt or debris. After washing, drain thoroughly in a colander. Ensuring the stone crop is well-drained is key to allowing the dressing to adhere beautifully.
Step 2
Peel and wash the half small onion. Pat it dry and then thinly slice it into julienne strips. Slicing the onion thinly will enhance the texture and ensure it blends harmoniously with the stone crop when tossed together.
Step 3
Let’s prepare the dressing for our delicious stone crop salad! In a bowl, combine 1 Tbsp of gochujang, 1 Tbsp of gochugaru, 1 Tbsp of vinegar, 1 Tbsp of maesil extract, 1 tsp of sugar, and 1/2 Tbsp of minced garlic. Whisk these ingredients together with a clean spoon or a small whisk until well combined, creating a smooth dressing.
Step 4
Add the thinly sliced onion and the prepared tangy dressing to a wide bowl. Using two chopsticks, gently toss the onion with the dressing. Be careful not to mash the onion, just lightly mix it so the dressing begins to coat the onion.

Now it’s time to combine everything! Add all the drained stone crop to the bowl with the lightly dressed onion. Using chopsticks or the tips of your clean fingers, gently toss the ingredients together. Avoid crushing the stone crop; the aim is to lightly coat all the leaves with the dressing.
