Refreshing Silken Tofu and Egg Soup

Effortless & Cooling! Silken Tofu Egg Drop Soup

Lately, I’ve been enjoying various dishes using silken tofu. Today, I made a wonderfully cooling Silken Tofu Egg Drop Soup, perfect for a refreshing meal. The preparation method was incredibly simple, making it an ideal dish for anyone to try.

Ingredients
  • 2 large fresh eggs
  • 2 handfuls of green onions (scallions)
  • 1 Korean chili pepper (optional, adjust to taste)
  • 800ml water
  • 2 Tbsp tuna extract (or fish sauce)
  • 0.5 Tbsp salted shrimp (saeujeot)
  • 0.5 Tbsp minced garlic
  • 1 package (approx. 300g) silken tofu

Cooking Instructions

Step 1

First, crack 2 large fresh eggs into a bowl. Gently beat them with a fork or whisk until the yolks and whites are well combined. You don’t need to whisk vigorously.

Step 2

Wash the green onions thoroughly, then thinly slice them into about 1cm pieces. Two handfuls should be sufficient. Using both the white and green parts will add more flavor.

Step 3

Remove the stem from 1 Korean chili pepper, wash it, and thinly slice it. If you enjoy a spicier kick, feel free to add more than one.

Step 4

Pour 800ml of water into a pot and bring it to a boil over high heat. Once the water is boiling, it’s time to add the flavor base. Add 2 Tbsp of tuna extract for umami, 0.5 Tbsp of salted shrimp for a refreshing taste, and 0.5 Tbsp of minced garlic for aroma. Stir well to dissolve the seasonings and let it boil rapidly.

Step 5

While the water is boiling, add the sliced Korean chili pepper to the pot to infuse a pleasant, subtle heat. The chili pepper will make the broth much more invigorating.

Step 6

Now, slowly pour the beaten eggs into the boiling broth. Resist the urge to stir immediately. Wait for about 10 seconds after pouring, then gently stir with chopsticks in large, sweeping motions. This technique will create beautiful, fluffy ribbons of egg rather than small, messy bits, ensuring a clean and appealing soup.

Step 7

Carefully unwrap the package of silken tofu. Using a knife, cut it into bite-sized pieces, about 2-3 cm in size. It’s best to cut them slightly thick so they don’t break apart too easily while simmering.

Step 8

Gently add the sliced green onions and the silken tofu to the broth. Let it simmer for another short while, just until everything is heated through. Stir gently to avoid breaking the tofu. Simmer for about 1-2 minutes to allow the refreshing flavor of the green onions and the creaminess of the tofu to meld into the broth.

Step 9
