- 2 Pinches Salt (approx. 1/10 tsp)
- 1/2 Tbsp Hot mustard paste (Yeon-gyeja)
- 1/2 Tbsp Mustard (Wholegrain or Dijon recommended)
- 1 Tbsp Vinegar
- 1/2 Tbsp Lemon juice
- 1/2 Tbsp Sugar
- 2 Pinches Salt (approx. 1/10 tsp)
Cooking Instructions
Step 1
First, wash the vegetables thoroughly. Then, julienne them to match the size of the radish wraps. It’s best if all ingredients are cut to a similar length and thickness for a neater appearance and easier eating. Julienne the imitation crab sticks as well.
Step 2
Gently rinse the radish wraps under running water, then squeeze out as much moisture as possible with your hands. Excess water can cause the wraps to unravel easily and dilute the dressing.
Step 3
While you can use various brands of radish wraps, we recommend opting for the thinnest ones available. This makes them easier to roll and results in a more tender texture.
Step 4
Place a perilla leaf on top of a prepared radish wrap. Then, arrange about 3 types of julienned vegetables (onion, carrot, cucumber) and imitation crab sticks on top. Don’t overfill, as it will make rolling difficult.
Step 5
Roll the radish wrap around the filling. Tuck in the edge slightly to secure it, preventing it from unrolling and ensuring a neat presentation. Arrange the finished wraps upright on a plate.
Step 6
In a small bowl, combine the hot mustard paste, mustard, vinegar, lemon juice, sugar, and salt. Whisk until smooth and well-mixed to create the delicious mustard cold salad dressing. Taste and adjust seasoning as needed.
